Festive Beet Salad

Ingredients

Julienne beetroot
Julienne carrot
Julienne Kohlrabi
Cranberries
Roasted pine nuts
Roasted almond sticks
Roasted hazelnut halves
Chopped dried plums
Chopped parsley
Chopped mint
Chopped arugula

For the Dressing

50g date honey
50g balsamic vinegar
2 crushed garlic cloves
40g olive oil
Salt, pepper
Teaspoon of mustard

Preparation

Dressing – mix all the ingredients in a jar into a homogenous mixture
Salad – mix all the ingredients in a bowl and pour on the dressing before serving!
